What can we expect from the 2022 harvest? What excites you at the moment, Ivan?<\/h2>\n

Ivan: \"\"This year, we harvested the grapes at optimal ripeness. The harvest for white grapes is characterized by a very good balance between acidity and mature character, while the red grapes show maximum ripeness and exceptionally soft tannins. One of the best harvests at Katarzyna, with great aging potential.\"\"<\/p>\n

Which are the best qualities of Ivan \/ Svilen, according to themselves?<\/h2>\n

Ivan: \"\"Svilen's attention to detail. In addition, he is able to think quickly and assess the situation, which places great importance on swiftly forming a plan. It's also great that Svilen has a precise taste and a thorough understanding of what wine can come from the grapes, tasting them even during the harvest, which ensures that everything is double-checked!\"\"<\/p>\n

Svilen: \"\"Ivan has a natural instinct for the vineyards, which is quite rare. He possesses this intuition and just knows exactly what to do. Ivan is also a more pessimistic taster, which might sound negative, but it helps balance my optimistic approach to the journey of the grapes from the vine to the bottle.\"\"<\/p>\n

How much time (km) do you spend traveling each harvest?<\/h2>\n

Svilen: \"\"Ivan and I take care of our vineyards, which span over 5,500 hectares. They are located in three different areas within a perimeter of about 30 km. From the start of the vineyard year, which begins in December with pruning, until the end of September, when the harvest is completed, we are at the vineyards every day for at least 3-4 hours. This part of the work is extremely important because, in order to produce good wine, you must have a deep understanding of the development of the grapes and their qualities.\"\"<\/p>\n

What is your favorite thing to eat after a long day during the harvest?<\/h2>\n

Ivan: \"\"The harvest is the most intense and stressful period of the year. After a long and hectic day, what you eat isn't the most important thing. However, for a good rest, in my opinion, a good drink is much more important.\"\"<\/p>\n

What is your favorite wine in your wine cellar?<\/h2>\n

Ivan: Encore Syrah\u201921 \u0438 Red Contemplations\u201921.<\/p>\n

Svilen: QM\u201920 \u0438 Le Blanc SB\u201922.<\/p>\n

In general, it's a bit hard to say what your favorite wine is because for a winery like ours, it's very important to give equal attention to all the wines you produce. We\u2019ve highlighted these wines because we are most proud of them, and the 2020, 2021, and 2022 harvests are the best so far for Katarzyna.<\/p>\n

Why do you think you have such a successful partnership in your work?<\/h2>\n

Svilen: \"\"I think we've understood well what needs to be done, and with all these years of working together, things just flow naturally. We both strive for absolute quality and know what to expect from each other. It also helps that, besides working together for 17 years, we\u2019ve grown up, learned, and lived very close to our families for almost 40 years. This natural connection helps a lot and, of course, is a big advantage for the end goal.\"\"<\/p>\n

Ivan: \"\"Our relationship is built on trust. We can always rely on good advice from each other, and at the right moment. Good communication is key, so we know exactly where to improve things next year to have a better harvest.\"\"<\/p>\n

Who is one of your favorite memories from the beginning of your work together at Katarzyna Estate?<\/h2>\n

Ivan: \"\"Over these 17 years, we've been through many different moments, both pleasant and not so pleasant. But we will definitely never forget the moment when, at the age of 21, we started working at Katarzyna Estate \u2013 the most successful wine project in Bulgaria.\"\"<\/p>\n

What are you most proud of in your collaboration?<\/h2>\n

Svilen: \"\"Of course, one of the nice aspects of our work is that we have received over 400 medals from the largest and most prestigious international wine competitions. We can confidently say that the wines we create are of world-class quality. But what's more important to us is that Katarzyna is an extremely established and recognizable brand in the wine market, and many people enjoy the wines we produce.\"\"<\/p>\n

Please share why you consider the vineyards of Katarzyna Estate to be so special?<\/h2>\n

Ivan: \"\"The region we are located in is exceptional. The combination of the climate and the specific characteristics of different parts of our vineyards, with varying soils, leads to a great diversity in the grapes produced. Our main goal is to express this character of the grapes 100% in our wines.\"\"<\/p>\n

Favorite part of your work?<\/h2>\n

Ivan: \"\"Being in the same winery for almost 17 years means knowing the vineyards and the grapes in detail. At this point, we know exactly what to expect from each parcel of our vineyard. When the grapes enter the winery, we can easily see the potential of the wines that will be created. And after so many years together, the team works in perfect harmony. Then, with great pleasure, we see that all the preparation done in the previous year, from cultivating the vineyards to harvesting the grapes, has paid off, and we are fully ready to start all over again.\"\"<\/p>","protected":false},"excerpt":{"rendered":"
