Blanc de Noirs се създава по специална технология за производство на бяло вино от червен сорт грозде. Гроздето се пресова внимателно и бързо веднага след беритбата, което позволява сокът да се отдели от ципите без продължителен контакт с тях. Тъй като багрилните вещества при червените сортове се съдържат основно в ципите, мъстта остава светла и се получава елегантно бяло вино с фин цвят, свежест и изразителен характер.
