The wines are produced using classic technologies with predominantly manual labour. During the grape harvest the sugar contents, the titratable acids and the phenolic maturity of the grapes are monitored daily through analyses and tastings. The production method includes several sorting lines and manual sorting of the grapes before fermentation, so that only the highest-quality grapes remain for processing.

Some of the wines mature in French oak barrels, which are regularly replenished and monitored for changes in quality. After bottling, the wines mature in bottles in an underground tunnel at a constant temperature of 14°C and 75% humidity.

The cellar is the largest-capacity Bulgarian wine cellar using the method of microvinification.

Since 2012, part of the vineyards have been grown organically. The vineyard area is 85 ha. The varietal composition consists of: Merlot, Cabernet Sauvignon, Syrah, Cabernet Franc, Malbec and Carménère. The first vintage of wine produced from organically grown grapes was in 2015 year.

In organic production the intervention is minimized, using natural wine yeast, rather than the usual human-selected highly-efficient strains. The involvement of technologists in the fermentation process is also limited, which in its turn emphasizes more the unique profile of each harvest.

The main oenologists of the cellar are Svilen and Ivan Kisyovy. The two brothers began to work at Katarzyna Estate as soon as they finished their professional education. They are the creators of some of the most emblematic and award-winning Bulgarian wines.

Just 2 years after its opening in 2006, Katarzyna Estate participated for the first time in the San Francisco Wine Competition, where it won a gold medal with the 2006 Contemplations Chardonnay. In the same year, the wine received 8 more medals from various prestigious competitions, which placed the cellar at the level of the most famous wine terroirs in the world.

Following are awards from competitions such as Decanter, Mundus Vini, Syrah du Monde, Chardonnay du Monde, Vinalies Paris, Concours Mondial Bruxelles, China Wine and Spirits Awards, International Wine & Spirit Challange and more.

One of the biggest accolades for the winery is the 91 points given to the Robert Parker system for Katarzyna Reserve 2008 and 2009, which puts it in the 90-95 points category, out of a maximum of 100. Katarzyna Estate is the first Bulgarian cellar whose wine is rated over 90 points on the official site of Robert Parker.

With over 300 honors won, Katarzyna Estate is one of the most awarded Bulgarian cellars.
