WINE IS CREATED IN THE VINEYARD. WE SIMPLY CARE FOR IT WHILE IT IS IN THE CELLAR.
It is extremely important for us to cultivate our vineyards with precision as our team firmly believes that great wines begin in the vineyard. In the winery we rely on traditional methods and predominantly manual labor aiming to enhance the natural qualities of the grapes through minimal intervention. Our pursuit of excellence is driven by the passion of our team as our people approach each wine with care and attention to even the smallest detail ensuring that every bottle truly embodies a unique style and character.
THE WINERY
Our winery spans an area of approximately 10,000 m² and features a very distinctive architectural design. The building consists of three levels, achieved through a stepped vertical layout along the slope of the hill. This structure allows for gravity-based transportation of the grapes and wine from one level to another.
On the first level are the sorting lines, where the grapes are carefully hand-selected before being accepted into the winery. This ensures that only the highest-quality berries proceed to processing. The second step takes place when the grapes enter the fermentation tanks, located on the middle level. The third level is where the wines are blended and aged in barrels. The underground level of the winery houses our wine library (enoteca), designed in the shape of a tunnel, where our limited editions and special wines are stored.
Vinification
At Katarzyna Estate, we process around 2,300,000 kg of grapes using the micro-vinification method. A major advantage of our winery is that the team works with and has access to numerous vineyard plots, each with distinct characteristics and qualities. This allows for the production of a large number of different wine batches, which are then used to craft our final products.
We harvest the grapes by hand into small crates with a capacity of 12 to 14 kg. The grapes are carefully sorted, and once crushed into must, they are transferred manually and by gravity into stainless steel tanks with volumes of 10 m³ and 15 m³, or directly into 400-liter French oak barrels. After the fermentation process, the wines are aged in 225-liter French oak barrels toasted to ""medium"" or ""medium+"" levels. The goal is for the oak not to overpower the grape’s natural aromas but rather to lend the wine elegance, structure, and a refined finish.

For us, every person working at the winery is of exceptional importance. Both the people in the vineyards and those in the winery play an irreplaceable role in the long process of turning grapes into wine. The true masters, however, who lead the entire team, are our head winemakers Svilen and Ivan Kisyovi. Their expert guidance is responsible for the outstanding wine portfolio produced at Katarzyna Estate.
OUR WINE HAS ITS OWN CHARACTER
Only two years after its founding in 2006, Katarzyna Estate took part for the first time in the prestigious international wine competition San Francisco Wine Competition, where it won a gold medal with Contemplations Chardonnay 2006. That same year, the winery received 8 more medals from various renowned competitions, placing it on par with some of the most famous wine terroirs in the world.
This was followed by awards from prestigious competitions such as Decanter, Mundus Vini, Syrah du Monde, Chardonnay du Monde, Vinalies Paris, Concours Mondial de Bruxelles, China Wine and Spirits Awards, International Wine & Spirit Challenge, and many others.
One of the greatest recognitions for the winery is the 91-point rating awarded to Katarzyna Reserve 2008 and 2009 by Robert Parker’s system, placing the wine in the 90–95 point category out of a maximum of 100. Katarzyna Estate is the first Bulgarian winery to receive a score above 90 points from Robert Parker’s official website. With over 300 awards won, the winery is among the most awarded Bulgarian wine producers.
